Coconut sugar is obtained from the flowers of the coconut palm, which grow directly from the nuts. It contains from 70 to 79% sucrose, glucose and fructose, and small amounts of potassium, zinc, iron and calcium. The low glycemic index makes coconut sugar suitable for diabetics.
The caramel-coconut flavor of coconut sugar, similar to the taste of cane sugar, makes it perfect for baking.
Coconut sugar is considered a slightly healthier substitute for regular white sugar.
